Confucius had it right 2500 years ago, "If it's not in season, I won't eat it."
Chinese have followed the concept of seasonal eating for millennia, because according to traditional Chinese medicine, we are what we eat, and if we consume seasonal foods that are similar in nature to the external environment, we remain in harmony with the environment, adapt better to changes in season and stay healthy.
The traditional Chinese lunar calendar divides the year into 24 solar terms. Start of Summer (Chinese: 立夏), the 7th term of the year, begins on May 5 and ends on May 21 this year.
